Our international Master Classes are all presented by award-wining whisky writer, journalist and world renowned whisky expert, Dave Broom with more than 30 years of experience in the whisky industry. He has written several books on whisky, including “The World Atlas of Whisky”, “Whisky: The Manual”, “The Way of Whisky: A Journey Around Japanese Whisky”, and “The Science and Commerce of Whisky”.
Broom has travelled extensively to whisky producing regions around the world, including Scotland, Japan, and the United States, and has a deep understanding and appreciation of the craft of whisky making. He is known for his ability to translate complex technical information into accessible language for both novice and expert whisky enthusiasts.

Nestled in the picturesque surroundings of Dufftown, Speyside, The Balvenie distillery has been handcrafting whisky for more than 125 years, notably the most handcrafted of single malts. Nowhere else can you find a distillery that grows its own barley, malts in its own traditional floor maltings and still employs a team of coopers to tend to the casks alongside a coppersmith to maintain the stills.

The Balvenie DoubleWood 12YO, was launched in 1993, using a process designed by our Malt Master David Stewart in 1982, now commonly known as ‘wood finishing’.
To make The Balvenie DoubleWood, David Stewart MBE takes whisky that has spent at least 12 years in traditional whisky casks, American Oak ex-bourbon barrels and hogsheads, and moves it to Spanish oak ex-Oloroso sherry casks for an additional nine months.
The Balvenie DoubleWood single malt whisky gains its distinctive character from being matured in two different wood types. Each stage lends different qualities to the resulting single malt whisky.
The traditional casks soften and add delicate character, the sherry wood brings depth and fullness of flavour and the final few months in our tuns allow the whiskies to marry harmoniously.
The Balvenie 12YO – Stories Collection – The Re-Creation of a Classic, probably the finest highland malt whisky.
Those were the words on the first ever bottle of The Balvenie Classic. This story is a celebration of David C. Stewart M.B.E.’s creativity and inventiveness, when he created The Balvenie Classic – and in doing so, pioneered wood finishing.
NOSE: Aromatic and lively, aromas of vanilla and spice evocative of dried clove and chai are layered on a base of earthly, malty undertones reminiscent of Balvenie’s own barley loft.
TASTE: A perfect complement of light oatmeal syrupiness and brittle toffee are followed by delicate hints of spice and a rich drying sensation from European oak.
FINISH: Lingering, lasting dry oak.
The Balvenie Caribbean Cask 14YO has been matured in traditional oak whisky casks for 14 years, and then ‘finished’ in casks that previously held Caribbean rum.
To create the ideal finish Malt Master David C. Stewart MBE filled American oak casks with his own blend of select West Indian rums.
The result is an exceptional single malt whisky with the traditional smooth, honeyed character of The Balvenie married with notes of toffee and a hint of fruit, with a warm, lingering finish.
TASTE: Rounded with vanilla and sweet oak notes, with a fruity character that develops with time
COLOUR: Gold
AROMA: Rich, sweet and creamy toffee on the nose combines with fresh fruit notes
FLAVOUR: Vanilla notes with rich toffee, a hint of fruit and a warm, lingering finish
FINISH: Soft and lingering
The Balvenie 16YO – Triple Cask, The Balvenie Triple Cask range comprises of 12 year old, 16 year old and 25 year old single malt whiskies. It is created by combining The Balvenie that has matured in the three most traditional types of cask – first-fill bourbon, refill bourbon and sherry – in a large wooden vessel known as a marrying tun. These new marriages of The Balvenie are made to precise recipes refined over time by our Malt Master David C. Stewart MBE to ensure that each captures the distillery’s distinctive rich, smooth and honeyed style.

FINISH: Gentle and lingering
The Balvenie PortWood, 21YO, to create The Balvenie PortWood 21 year old single malt whisky, a marriage of rare Balvenie is transferred to port casks, or pipes, which have held fine port wines.
Here it is sampled regularly by The Balvenie Malt Master David C. Stewart MBE to ensure that just the right amount of character is imparted by the port casks, enhancing and developing the single malt whilst preserving its original characteristics.
Considered by many to be David’s finest creation, this whisky is one of his proudest achievements and has won an array of highly coveted industry awards since its release in 1996.
NOSE: A perfume of fruity and ripe raisin notes, backed by a nutty dryness.
TASTE: Refined with remarkable character, it is creamy and silky with fruit, honey and spice notes.
FINISH: Long, gentle, nutty.
